Are you a sneaky mom? I am! I’m not talking about hiding in the bathroom to eat some chocolate (although I’ve been known to do that as well!) I’m talking about hiding veggies in food.
Sometimes you have to be sneaky with kids. Thankfully, my kids are actually not picky thanks to my raising healthy eaters tips but I still “hide” veggies in many of their meals because veggies are a great thing to have in every meal!
Even if you don’t have kids, you might still be looking for more ways to get your veggies in. I’m actually horrendously picky (I blame years of eating a S.A.D and texture issues) so finding ways to trick myself into eating veggies is a must.
Have you ever felt justified when eating chocolate zucchini bread because you knew there was zucchini in there? You know you have!
But let’s be honest…. that zucchini (no matter how much you add) isn’t going to make up for the cups and cups of sugar that the chocolate zucchini bread has as well!
Now this isn’t to say we should avoid chocolate zucchini bread… There is a time and place to indulge at little. But we really shouldn’t kid ourselves into thinking it’s healthy.
That said… I do have a completely healthy way to enjoy chocolate zucchini bread!
A Chocolate Zucchini Bread Smoothie!!!
Doesn’t that just sound amazing?! Now there are not actual pieces of chocolate zucchini bread in this smoothie (that would totally defeat the purpose!) But the flavor is the same as chocolate zucchini bread!
I could have named this Chocolate Zucchini Smoothie but come on…. Chocolate Zucchini Bread Smoothie is much more enticing!
Zucchini is one of those bountiful veggies that you get tons of in the late summertime. You are likely to have zucchini just waiting to be use! I usually get at least 2 monster size zucchini in the summer and I make sure to freeze it so that I always have zucchini on hand!
It can be hard to come up with ways to use zucchini… I use zucchini in my zucchini fritter recipe, zucchini soup, and I even have a recipe for chocolate zucchini bread popsicles! So a smoothie that uses zucchini seems only natural!
There is a whole cup of zucchini in this smoothie recipe! It’s a great, easy way to get veggies in. Plus, unlike many zucchini recipes, smoothies require no cooking or baking so no heating up the house in the summer!
For this smoothie, my family tends to use milk kefir as a base in this smoothie. I love using milk kefir because it’s a great way to add probiotics to our bodies. Yogurt works too if you want those probiotics!
Not interested in the slightly tanginess of probiotic bases? That’s ok, any milk of your choice works! If you are diary free or vegan this means you can still make this smoothie; just opt for your favorite milk alternative.
Psst, need another veggie packed popsicle recipe? Try my carrot cake popsicles!

Combine all ingredients in blender and blend until smooth.
This works best with a high powered blender like a Vitamix but should do okay in a regular blender.
