Grain-free Parsley Cheese Bread slathered with butter gives you that “I’ve died and gone to heaven” feeling. If you are grain-free like me, and don’t have many options for bread, you really know what I am talking about. Maybe you don’t even remember when you last had it.

This bread is so easy because you don’t have to bother with yeast rising or kneading the dough. Does it get any easier than that? Well, I used to like kneading bread dough, but I haven’t had any luck making a grain-free bread using yeast that required kneading.

I think back when women made bread every day, they used to take out their anger and frustration out in their daily kneading sessions. And the madder they were, the lighter their bread was!

Heat your oven to 375 degrees. Then I prepared my loaf pan. I like to place parchment paper on the bottom. This ensures I have a perfect loaf of bread.

I just traced around the bottom of my pan and cut it out. I placed the paper inside and sprayed all of it with cooking spray.

Toss your flours with a couple of forks. This is very important in grain-free, gluten-free baking, as this allows air to enter the flour.

 

Combine with baking powder and salt.
In another bowl, whisk milk, melted butter, egg, and sour cream until the egg is slightly beaten.

 

Combine wet ingredients with dry ingredients with wooden spoon. I usually stop mixing before its completely mixed, so it doesn’t get over mixed.

 

Gently fold in cheeses and parsley.

 

Place dough in loaf pan. Smooth and round the top with your hands. Bake for 50-60 minutes, or until wooden skewer comes out clean.

1 1/2 c. almond flour
1 c. tapioca flour
1/2 c. coconut flour
1 Tbs. baking powder
1 tsp. salt
1 c. milk
3 tsp. butter, melted
1 egg
3/4 c. sour cream
1 c. grated mozzarella cheese
1/2 c. Parmesan cheese
1/4 c. fresh parsley, minced

Directions:

Heat oven to 375 degrees. Prepare loaf pan.
