Do you love pudding? What am I saying! Everyone loves pudding? It’s a classic snack/dessert that everyone loves. It’s simple, pretty affordable, and it tastes oh so yummy!
Of course, commercial puddings really aren’t all that healthy for you. They have artificial ingredients like dextrose, modified cornstarch, fake flavorings, polysorbate 60, and food dyes.
I don’t know about you but I don’t really want to eat those ingredients! So I came up with my healthy vanilla pudding! It’s cornstarch free and sugar free!
However, if you would rather not use stevia you can easily sub in 1/4 cup of your favorite sweetener.
Then came the holidays. Vanilla pudding is amazing but I felt like getting a bit festive. This worked out perfectly as I had just received some wonderful holiday flavor concentrates from Nature’s Flavors!
Nature’s Flavors is a great producer of natural flavorings and extracts. Seriously, they have so many flavor options! Many of their flavors are organic, vegan, and alcohol free.
The next thing I knew, I was in my kitchen creative a trio of holiday puddings.
This lovely holiday pudding trio consists of gingerbread, eggnog, and peppermint flavors. All very holiday appropriate and all very delicious!
Holiday Pudding Trio
Gingerbread Pudding
1 tsp arrowroot
1/16 tsp stevia powder (2 scoops)
pinch of salt
1 egg yolk
1 cup milk
1/2 tsp molasses
1 tbs butter
1/4 tsp gingerbread flavor concentrate
Eggnog Pudding
1 tsp arrowroot
1/16 tsp stevia powder (2 scoops)
pinch of salt
1 egg yolk
1 cup milk
1 tbs butter
1/4 tsp eggnog flavor concentrate
Peppermint Pudding
1 tsp arrowroot
1/16 tsp stevia powder (2 scoops)
pinch of salt
1 egg yolk
1 cup milk
1 tbs butter
1/4 tsp peppermint flavor concentrate
natural red food dye (optional)
Directions:
In small saucepan, whisk arrowroot, stevia, and salt.
Add in egg yolk and milk (and molasses if making the gingerbread pudding).
Turn on stove to medium-high heat and continuously whisk while mixture heats up to a simmer.
Continue cooking until mixture has thickened enough to coat the back of a spoon. Roughly 5-10 minutes.
Remove from heat. Add butter and flavor concentrate. Stir to combine.
Transfer pudding to your favorite heat safe jars or bowls.
Let cool in refrigerator for a few hours to thicken and then enjoy!
