It has only just gotten hot here where we live. It’s sad but true. However, now that it’s FINALLY summer, I’ve gotten to try some cool summer treats on the kids.

One of our favorite summer treats is watermelon. I love watermelon, my kids love watermelon, my daughter especially; she’s as addicted as her mama.

Instead of just slicing up some watermelon, we decided to give our watermelon a bit of a different twist.

 
Odds are you’ve seen watermelon pops on Pinterest. These frozen variations on watermelon are extremely simple to make and turn out to taste a bit like a popsicle. A healthy popsicle.

Frozen Watermelon Pops

Watermelon
Wooden popsicle sticks
Cookie cutter – optional but it makes fun shapes

 
>Directions:
Cut your watermelon into ½ ‘’ thick slices. Use a cookie cutter to cut out watermelon shapes.
Alternatively you can just free-hand it and slice up your watermelon into any shape you’d like.Once you have your shapes, insert one popsicle stick into each shape.
Lay your watermelon pops on a baking sheet that is covered with parchment paper (you don’t want your pops to stick!)
Freeze the pops for a couple hours. (Longer is fine too, as long as you cover them up to avoid freezer burn)
Voila, frozen watermelon pops!
 

Another great thing about these pops is that they take a bit longer to eat, which is quite handy when you have a toddler who is constantly asking for more watermelon!
